Italy, surrounded on three sides by the Mediterranean Sea, is a seafood symphony asking white wine to be the featured soloist. Any white wine will do but a rule of thumb is to try and find wines of contrasting texture and flavor, from sparkling to light, crisp, and mineral, to things richer and weightier. If you want to be authentically Italian, you can choose amongst wines like Greco, Fiano, Falanghina, Etna Bianco, Tocai Friulano, Pinot Grigio, and many more. But, since Massican is Italian American, aficionados of American wine can also have their day. Indeed, no meal (the lemon-stuffed branzino pictured above) more thoroughly calls for Massican’s quintessential wine style — as this dish is a natural outlet for Chardonnay, Sauvignon Blanc, and richer the blends like Annia and Gemina.
